Favorite recipes from a couple of guys you don't know!
Jack's Black Bean Soup
Soak 1 lb. of black beans overnight. Discard water and rinse a couple of times. Add to beans, 2 cans of beef broth and 2 or 3 cans of water. Start heating. Sauté in olive oil 1 chopped onion, 2 stalks of chopped celery, 1 clove of minced garlic until onion begins to clear (about 8 minutes). Put into pot with beans.
Add to pot 1/2 teaspoon cumin, 1/2 teaspoon dry mustard, 1 tablespoon lemon juice, a little ground pepper, and 1 bay leaf. Simmer for about an hour. Add 2 sliced carrots and simmer for another hour. Check liquid level - you may have to add water. Slice 1 link of smoked polish sausage and add to pot. Continue to simmer for an additional 1/2 hour, salt to taste.
This soup is best if left in the refrigerator for a couple of days.

Hen of The Woods (sheep head mushrooms) Casserole
| Layer 1: |

2 c. Hen of the Woods, sliced 1/4 c. chicken broth |
|
1 c. clam juice 1/2 Tbs. butter |
| Layer 2: |
|
1 med. onion, chopped 1/2 stick butter |
|
1 1/2 c. seasoned bread crumbs |
| Sauce: |
|
1 can Cream of Mushroom Soup 1/2 c. milk |
|
1/2 c. sour cream 1/2 can onion rings |
Combine first four ingredients from Layer 1 in a sauce pan and heat through. In a separate pan, sauté onion in butter until golden. Add bread crumbs plus some broth from Layer 1. In greased casserole dish, alternate Layers 1 & 2 until ingredients are used up. In a pan, mix together last four ingredients and heat while stirring. Pour sauce over layers and put onion rings on top. Bake at 325º for 25 to 30 minutes. Serves 4

Breaded Puffballs
| 1-2 large Puff Balls |

Cracker Crumbs |
| 2 eggs |
|
Butter |
| Salt & Pepper to taste |
|
1 tsp. Dried Chives |
| 1 tsp. Dried Parsley |
|
1/2 tsp. Garlic Powder |
Slice Puff Balls into 3/8" thick slices. Beat the eggs and add salt and pepper. Mix cracker crumbs, chives, parsley and garlic powder together. Dip Puff Balls slices in egg mixture, then into cracker crumbs and sauté in butter until golden brown.

Mushroom Catsup
Can be used on meats and sandwiches.
3/4 c. sliced domestic mushrooms
1/3 c. chopped onions
1 Tbs. butter
1/4 tsp. salt
1/2 tsp. soy
1/3 c. tomato catsup
water
Sauté mushrooms and onions in butter for 2 to 3 minutes. In a blender, combine mushrooms, onion, salt, and soy. Blend into a puree, add only enough water to get a fairly smooth puree. Combine the puree with the catsup; store in a jar, and refrigerate.

Baked Beans
4 - 1 lb. Boston Beans
1/2 tsp. dry mustard
1/4 tsp. Tabasco sauce
1/4 tsp. paprika
3 oz. bourbon
1/3 c. strong coffee, brewed
Brown sugar
Mix all ingredients together in a casserole dish. Sprinkle with brown sugar. Let stand for 1 hour at room temperature. Bake covered at 375º for 90 minutes. Serves 10-12.

Lite Mushroom Soup
1 onion, chopped
1 lb. domestic mushrooms, sliced
3 - 14 oz. cans Chicken broth
4 - 14 oz. cans water
1/3 c. dry vermouth
1/4 tsp. ground black pepper
2 Tbs. butter
Sauté onions and mushrooms in butter until onions are translucent. Add remaining ingredients to pot and simmer for 30 minutes.

Lettuce & Cauliflower Salad
1 head of lettuce
1 lb. of bacon, cooked
1 head cauliflower
1 red onion
1 white onion
Cut lettuce thin, slice onions, break up cauliflower into flowerets, crumble bacon. Layer lettuce, onion, cauliflower and bacon in several layers until all are gone. On top put 2 c. mayonnaise, 1 Tbs. sugar and 1/3 c. parmesan cheese. Refrigerate overnight. Toss before serving.

Jarosak Jerky
| Step 1: |

Cut jerky meat 1/4"-3/8" thick. Layer in a bowl with a sealed lid. Each layer to marinate in liquid smoke, teriyaki sauce, and soy sauce (a touch of hot sauce if you like it hot). |

Sprinkle each layer with black or red pepper, garlic salt, onion salt, and any other preferred seasoning to your liking. (I sprinkle brown sugar on each layer for a little sweetness). |

Let this mix marinate for at least 8 hours refrigerated. Keep turning the bowl over every couple hours, so it marinates all the meat evenly. |

Lay single layers of jerky on dehydrator trays. Using a pastry brush, brush both sides of the jerky with a mixture of the following:
A-1 steak sauce
Teriyaki sauce
Tiger sauce
Your favorite hot sauce (to increase the hotness, put the hot sauce on the jerky direct to your liking)

Sprinkle the jerky with black or red pepper and any other spices to your liking. |

Dehydrate for approximately 10-12 hours. Sample to your liking. The jerky will vary in drying time depending on the thickness. Sometimes you might want to take the thinner pieces off earlier, and let the thicker ones remain on longer. After about 4-5 hours, I rotate the trays putting the bottom one on top and the top one on the bottom.
The taste differ with the seasonings, amount of marinating time, thickness and even the cut of meat and how you slice it.
